Spinach Salad with Hot Bacon Dressing

Here’s another really easy-to-prepare recipe for spinach salad that is a favorite during the cold winter months. But… you can actually enjoy it any time. We do!

Spinach salad is a classic and healthy salad that is perfect for any occasion. It is made with fresh spinach leaves, which are a good source of vitamins A, C, and K.  It can also be topped with a variety of ingredients, such as grilled chicken, chopped tomatoes, or croutons.

Spinach Salad Ingredients

  • 6 strips of bacon, coarsely chopped
  • 1 10-oz. bag of fresh spinach
  • 4 green onions, coarsely chopped
  • 2 cloves garlic, minced
  • 1/3 C. red wine vinegar
  • 2 tsp. sugar
  • 4 hard-boiled eggs, sliced
  • 1 small red onion, sliced
  • 4 fresh mushrooms, thinly sliced

Instructions

The Dressing: Cook the bacon and reserve about 3 T. of the drippings. Sauté the green onions and garlic in the bacon drippings. Add vinegar and sugar and mix well.

The Salad: Tear spinach into bite-size pieces. Garnish salad with red onions, bacon, mushrooms, and egg. Heat dressing and drizzle onto salad just before serving.

This salad is best served warm, so make sure to toss it with the hot dressing just before serving and serve in a beautiful wood serving bowl. The bacon dressing is also delicious on other salads, such as Caesar salad or Cobb salad.

Optional variation: You can also add artichoke hearts and red pepper slices to the salad.
