Spinach Salad with Hot Bacon Dressing

This recipe is a favorite during the cold winter months. 

Ingredients:
 
bullet6 strips of bacon, coarsely chopped
bullet1-10 oz. bag of spinach
bullet4 green onions, chopped
bullet2 cloves garlic, minced
bullet1/3 c. red wine vinegar
bullet2 tsp. sugar
bullet4 hard boiled eggs, sliced
bullet1 small red onion, sliced
bullet4 fresh mushrooms, sliced

 

Instructions:

Dressing:  Cook the bacon and reserve about 3 T. of the drippings.  Sauté the green onions and garlic in the bacon drippings.  Add vinegar and sugar.

Salad:  Tear spinach into bite-size pieces.  Garnish salad with red onions, bacon, mushrooms and egg.  Heat dressing and drizzle onto salad just before serving.  (Variation:  You can also add artichoke hearts and red pepper slices.)
