
This is a fast and easy recipe that is easily modified to accommodate
various flavors and spices. Try adding some bacon or instead of
the oregano, use some Spanish spices and serve with
Margarita pike!
 | 1 T. oil |
 | 1 medium onion, chopped |
 | 2 cloves garlic, minced |
 | 1 can (15 oz.) black beans |
 | 1 can (14.5 oz.) stewed tomatoes |
 | 2/3 cup water |
 | 1/2 oregano |
 | 1 1/2 cups Minute brown rice |

Heat oil in skillet. Add onion and garlic. Cook and stir
until tender. Stir in beans, tomato, water and oregano.
Bring to boil. Stir in rice. Return to boil. Reduce
heat to low, cover and simmer 5 minutes.
