Grandma's Zucchini Bread

Ingredients:

bullet2 cups granulated sugar
bullet1 cup oil (corn or peanut)
bullet3 eggs
bullet2 cups zucchini
(grated with peel)
remove seeds from large zucchini
bullet3 1/2 cups flour
bullet1/2 tsp. salt
bullet1/2 tsp ground cinnamon
bullet1 tsp baking soda
in 1 tsp boiling water
bullet1 cup chopped pecans or walnuts
bullet1/2 cup chocolate chips
bulletRaisins or chopped dates (optional)

Directions:

The best and fastest way to grate zucchini is with a Kitchen Aid mixer using the slicer and shredder attachment.  Obviously the old-fashioned hand shredder will always suffice.

Mix all ingredients well except the nuts, chips and raisins until well blended.  Fold in the nuts, chocolate chips and raisins, if desired.  Bake at 350 for 50-60 minutes in 2 loaf pans.  Check with a toothpick for doneness.  Remove the loaves from the pans and set on cooling rack.  This recipe also freezes well.
